  1. Prepare 2 packets Fish pie mix
  2. Get 2 Rainbow trout fillets
  3. Make ready 1 packet Raw tiger prawns

  6. Prepare 1 Leek
  7. Get 1 Broccoli
  8. Prepare Handful Baby spinach
  9. Prepare Handful Frozen peas/ soya beans/ edamame beans
  10. Take 2 packets Ready made mash potato
  11. Make ready 3 tablespoons Creme Fraiche
  12. Take 1 tablespoon Double cream or Milk
  13. Make ready 1 teaspoon Oregano
  14. Make ready 1 teaspoon Parsley
  15. Take Knobs butter and olive oil for frying etc

The key to the best flavour is using good-quality fresh stock. This healthy fish pie with cauliflower topping has all the qualities of a great, hearty comfort food dish but with a lot less calories. Plus it comes with a vegetable already in it so there is no need to make a side dish! This delicious, healthy fish pie without potato is super quick and easy to throw together.

Instructions to make Healthy Fish Pie:
  1. Cut up vegetables excluding broccoli. Ideally thinly sliced.
  2. Break broccoli head into smaller florets. Boil a pan of water. Boil broccoli until soft enough for mashing later.
  3. Heat a large frying pain. Use oil if desired. Fry Rainbow trout fillets. Once cooked, place in large casserole dish suitable for oven. Flake into pieces around 2 to 5cm size. Do not make too small as you want to keep the texture of fish chunks.
  4. Cook the raw prawns. Once cooked place in casserole dish.
  5. Cook the fish pie mix. Once cooked place in the casserole dish.
  6. In a large bowl combine the mash potato, drained cooked broccoli, butter and a dash of cream if desired.
  7. Mix mash potato mixture until well combined. Set aside for later.
  8. Add butter and oil to large frying pan. Fry sliced vegetables until golden brown. Once cooked add to casserole dish.
  9. Add baby spinach and frozen beans or peas to casserole dish. Preheat the oven to 180c fan oven (200c non fan or gas mark 6).
  10. Add herbs, creme fraiche and cream/ milk to casserole dish. Mix so evenly combined but do not over mix so that the fish remains in a chunky form. Season with salt and black pepper.
  11. Once fish mixture mixed. Top with the mash potato mixture and smooth the top with a large spoon. Add a few knobs of butter to help crisp up the topping in the oven.
  12. Once oven preheated. Place fish pie in the middle of the oven for 25 to 30 mins. If top does not crisp up, use the grill in your oven for 2 to 5 minutes. I served my fish pie with steamed sweet cauliflower and sautéed samphire with a squirt of lemon juice.

Scoop the flesh out of the baked potatoes and place in a large bowl; discard the skins. Mash with a fork until butter has melted and potatoes are smooth. Spread the mashed potatoes evenly over the top of the fish. Fish pie is a classic recipe and in my house it was something I remember my mum making throughout my childhood! Traditionally, fish pie can be pretty unhealthy, full of high fat milk and flour, so I've created this Healthy Fish Pie recipe so that I can still enjoy an old favourite and stay healthy at the same time!
