  1. Prepare 4 chicken legs (but any chicken will do)

  5. Get 2 tablespoons good quality curry paste - I used ptaks jalfrezi paste but any will do
  6. Make ready 2 large onions - I used 1 red and 1 white

  8. Get 1 chopped clove ginger
  9. Make ready Cup sultanas
  10. Take Chopped almonds to garnish
  11. Make ready Fresh coriander to garnish

I'm all about easy one pot wonders! It really is so very easy. So create your very own show stopper when you lift the lid at the dinner table 🙂 After frying of your spices, chicken, mushrooms & onions. You simply add your rice and stock and bang it in the oven!

Steps to make Easy one pot Chicken Biryani:
  1. Fry onions in oil till golden then brown chicken. Then add curry paste, garlic, ginger, and turmeric and coat well. Then add rice rice and coat well in all spices. Add chicken stock then sultanas and give it all a good mix.
  2. Place a lid on the pot and bring to the boil. Then turn heat down and simmer for 5/7 mins or so. Then leave with the lid on to rest for 10 mins before fluffing up with a fork. Garnish with chopped almonds and coriander.
  3. I made a vegetable curry on the side made with lots of onions, tomatoes, aubergines, spinach and peppers in oil, and a pinch of cumin. It went nicely with the biryani.

Rice is only cooked for few minutes in the instant pot and chicken does not get enough time to cook thoroughly, especially if its of a big size. Add all the ingredients, except the spinach and garnishes, to a large pot and bring to the boil over a high heat. Turn down to the lowest possible heat, cover and let simmer until the rice is fully. Chicken biryani is the perfect one-pot dish. Chicken, rice and vegetables are all cooked together with a selection of spices in one large sauté pan.
