  17. Prepare 1 tbsp soy sauce (I use Pearl River Bridge dark) of a flavour you like
  18. Make ready 1 (120 g) packet black bean sauce
  19. Prepare 300 g ready-to-wok noodles
  20. Prepare Fresh coriander, chopped

Stir fry vegetables: Take out of the pan and add the vegetables. Add noodles or rice, or serve as is for a gluten-free meal. I have come to rely quite heavily on this easy, delicious chicken stir fry with easy stir fry sauce. A quick and easy dish to prepare, this chicken stir-fry is packed with veggies.

Steps to make Simple Chicken Stir-fry:
  1. Mix the hazelnut oil and pepper in a bowl. Roll the chicken strips in the marinade to cover, then set aside.
  2. Heat the rapeseed oil medium-high in a wok and fry the garlic, chili and ginger purée for 1 minute.
  3. Add the chicken strips and cook for 2-3 minutes, tossing or gently turning, until beginning to go golden.
  4. Add all the vegetables and cook for around 4 minutes, tossing or turning, until vegetables are al dente.
  5. Add the noodles, soy sauce and black bean sauce, toss, turn or stir to mix well and cook for a further 2 minutes or until the chicken and vegetables are cooked.
  6. Serve immediately onto warmed plates, sprinkling on some coriander.

Try adding bean sprouts, bamboo shoots, snap peas, or any of your favorite vegetables. Serve it with white or brown rice, or noodles. Once the oil is hot, add chicken, season with salt and pepper, and sauté until cooked through and browned. Remove cooked chicken from pan and set aside. When the mushrooms start to soften, add broccoli florets and stir-fry until the broccoli is tender.
